Blueberry Cobbler

 

 

Georgia grown blueberries, a tangy summer tradition, blueberries conjure up images of blue stained fingers, fresh, fruity summer desserts and warm muffins. Ways to enjoy blueberries are endless. They're tiny, but blueberries are packed with a flavor all their own.

Ingredients
:

The buttery crust for this cobbler begins as a batter on the bottom and bakes through to the top. Best with glass bakeware. For easier clean-up, grease pan before filling.

1/2 c. (1 stick) butter
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
3/4 c. milk
2 c. fresh blueberries (or 12 oz., frozen)
1/2 c. sugar
1/2 c. water

Directions:

Preheat oven to 350 degrees. Melt butter in a shallow 1 1/2 quart baking dish. In mixing bowl, combine flour, baking powder, salt, sugar and milk; pour evenly over butter. Combine berries, sugar and water; spoon evenly over flour mixture. Do not stir. Bake 40 to 45 minutes. Makes 4 to 6 servings.

 

 

GA Blueberry

 

 

The Georgia blueberry industry is a dynamic enterprise of relatively recent development. The blueberry industry is concentrated in the flatwoods of southeast Georgia and ships fruit all over the world.

The development of the blueberry industry is an interesting story. Local fishermen in Brunswick and Toomsboro had collected some of the best wild berries from the Satilla and Withlachoochee rivers of south Georgia. These selections were crossed with selections from west Florida to create cultivars (cultivated varieties) of rabbiteye blueberries (Vaccinium ashei). Since 1944 the University of Georgia has maintained a blueberry breeding program and released twelve cultivars of rabbiteye blueberries. These cultivars have formed the basis for the Georgia blueberry industry.
